KCBS teams are known for cooking some of the best barbeque in the world, but it takes a dedicated team of judges to decide which is truly the best-of-the-best. Being a Certified Barbeque Judge (CBJ) means more than just getting to taste award-winning barbeque – and deciding which barbeque wins those awards. It’s about representing and spreading the message of KCBS, which is to promote America’s cuisine – barbeque.

To become a CBJ, just attend one of the hundreds of classes conducted by KCBS every year throughout the country. In a half-days’ time, you’ll learn how to grade world-class chicken, pulled pork, ribs and brisket – and taste them during the process!

By the time you’re finished, you’ll be ready to sign up for the next competition in your area! And remember: your CBJ fee also includes one year’s membership to KCBS. It’s a win-win!

Your instructors will be Merl & Carol Whitebook & Gene Goycochea.  Both Gene, Carol & Merl are three of the finest KCBS Reps in the west, if not all of the U.S.

As part of your class you will receive instruction in KCBS scoring, procedures, allowed and disallowed display techniques, new rules for 2015, and actual scoring (while eating) sample entries in all four KCBS categories.  After scoring each meat, scores will be discussed and you will receive feedback that will help you to more systematically score entries and understand the process.  If you are a new competitor, get some real insights into what constitutes a winning entry in the judge’s eyes, and what they are looking for.

Judges will learn to examine several criteria’s during the blind judging process: Appearance, Tenderness and Taste (the most critical of all the criteria’s.  Judges will discover how the spices (dry rubs) and sauces (wet, if used) should complement their meats rather than overpower the taste of the meat. Tenderness & Doneness, the meat should not lose textural integrity when pinched between two fingers and should not fall off of the bone.  As well as a variety of presentation styles relating to competition Turn In Boxes.

I’m sorry that we can not gaurantee any one taking this class a chance to judges this event as we already have our confirmed judges to date. Cash refunds will not be made within 30 days of class as we will have already purchased food and materials for class participation. However we usually have a couple persons who do get this opportunity to actually judge due to No-Show’s of confirmed judges. We do however have opportunities to help in the Judges tent should you like to volunteer to help during the judging process;
